Quick Mango Salsa

2 ripe mangos 1 large or 2 small tomatoes 2 green onions 1 jalepeƱo pepper, seeded and minced 1T chopped cilantro juice of 1 lime s&p to taste Just chop up ingredients and combine. I like to let it sit in the fridge for an hour or two for the flavors to combine. I am a cilantro nut, but you really don't want more cilantro than that. It will be too overpowering. It is SOOO yummy.

Sprinkles Cupcakes

Have you ever been to Sprinkles? It's a little gourmet cupcake shop with extremely delicious and slightly overpriced cupcakes. I highly recommend a visit the next time you are in downtown Scottsdale. Here are two recipes I tracked down online. I've tried them both. They are both fabulous. SPRINKLES STRAWBERRY CUPCAKES Makes 1 dozen 2/3 cup whole fresh or frozen strawberries, thawed 1 1/2 cups all-purpose flour, sifted 1 teaspoon baking powder 1/4 teaspoon coarse salt 1/4 cup whole milk, room temperature 1 teaspoon pure vanilla extract 1/2 cup (1 stick) unsalted butter, room temperature 1 cup sugar 1 large egg, room temperature 2 large egg whites, room temperature Directions Preheat oven to 350 degrees.
