Grandma Isobel's Squash Pie

3 c cooked banana squash (or pumpkin)
2 cans (12 oz) evaporated milk
2 c sugar
2 T flour
4-5 eggs
salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp ginger
1/2 tsp ground cloves
1 tsp pumpkin pie spice
1 T molasses (optional)
1 tsp vanilla
1/2 tsp lemon juice

Mix sugar, flour and spices together then mix with wet ingredients. Pour into pie crust, and fill pretty high. Bake at 375 until it is well set. Check by putting a knife in the center. If it comes out clean it is ready. "Eat with plenty of whipped cream!" -Isobel F. Williams

Makes three 8 inch pies.

*I used to never understand when people didn't like pumpkin pie because I had only had this kind. I didn't know for many years later that it was really squash. It doesn't have the same orange color as pumpkin, but I think it tastes so much better. HAPPY THANKSGIVING!

Sprinkles' Lemon Buttercream Frosting

1 cup butter, softened 3 3/4 cups confectioners' sugar juice and zest of one lemon 1 tsp. vanilla 1/8 tsp. salt Combine butter, sugar, and salt and beat till well combined. Add lemon juice, zest, and vanilla and continue to beat for another 3 to 5 minutes or until creamy. I made this for lemon cupcakes for a baby shower and it was so good! I did add a little more sugar so it was a little stiffer and easier to pipe with a decorating tip.

Baked Beans

So what if nobody has posted in a year and a half? I got this recipe from my cousin Carolyn and needed to type it up. I really love the contrast of the different beans in this one. Great for bar-b-q's and potlucks. 1 lb ground beef (I did not include this. To me, putting ground beef in baked beans turns it to chili.) 1 lb bacon 1 onion, diced 1 15 oz can butter beans, with liquid 1 15 oz can red kidney beans, drained & rinsed 1 15 oz can pork & beans 3/4 c brown sugar 1/2 c ketchup 2 tsp apple cider vinegar 1 tsp salt 1/2 tsp pepper Brown bacon and drain. Cook onion in some reserved bacon grease. Combine the rest of ingredients and pour in a greased casserole dish. Bake uncovered at 350 for 1 hour.

Ghoulosh

I know, I'm breaking my own rule about no cream soups, but it doesn't seem so bad next to the high fructose corn syrup feast that happens right after. I love this meal because it is yummy, hearty and one dish. I served it with some fresh bread. Yum! 1 1/2 pounds ground beef 1 pound ground pork sausage salt and pepper to taste 2 tablespoons pumpkin pie spice (I didn't use this in mine because I didn't have any, and I was afraid it might be too weird for my kids. Maybe next year?) 2 tablespoons brown sugar 2 (14.5 ounce) cans chicken stock 1 1/2 cups long grain and wild rice mix 1 sugar pumpkin 1 (10.75 ounce) can condensed cream of celery soup 1 (10.75 ounce) can condensed cream of mushroom soup 2 (4 ounce) cans mushroom stems and pieces, drained 2 (14.5 ounce) cans French cut green beans In a large skillet over medium heat, mix ground beef and sausage. Cook and stir until evenly browned. Drain meats, and mix in chicken stock and rice. Cover, and cook 25 to 30 minutes, u...
