Cranberry Orange Scones

These are sinfully yummy and one feels so British eating them. 2 cups flour 1 TBS baking powder 1/2 tsp salt 1/2 tsp cinnamon 1/4 cup butter 1/4 cup sugar 2 eggs 1/2 cup plus 2 TBS cream 1TBS orange zest 1 cup dried cranberries plumped in 4 TBS orange juice (boil juice, take off heat and soak cranberries for 30 mins) 1/4 cup sugar Heat oven to 425 degrees Cream butter, sugar, eggs. Add. 1/2 cup cream and ornate zest. Add flour, powder, salt, cinnamon. Squeeze juice out of cranberries and add to dough. Roll into a circle, 1/2 inch thick.  Spread additional 2 TBS cream on circle and sprinkle with the 1/4 cup sugar. Cut circle into 12 wedges. Bake on a greased cookie sheet 12-15 minutes Cool slightly on a rack before serving.

Baked Beans

So what if nobody has posted in a year and a half? I got this recipe from my cousin Carolyn and needed to type it up. I really love the contrast of the different beans in this one. Great for bar-b-q's and potlucks. 1 lb ground beef (I did not include this. To me, putting ground beef in baked beans turns it to chili.) 1 lb bacon 1 onion, diced 1 15 oz can butter beans, with liquid 1 15 oz can red kidney beans, drained & rinsed 1 15 oz can pork & beans 3/4 c brown sugar 1/2 c ketchup 2 tsp apple cider vinegar 1 tsp salt 1/2 tsp pepper Brown bacon and drain. Cook onion in some reserved bacon grease. Combine the rest of ingredients and pour in a greased casserole dish. Bake uncovered at 350 for 1 hour.
YUMMMMOLA! That's all I have to say about these rolls BROWN OATMEAL ROLLS 2 cups boiling water 1 cup rolled oats (not quick - yuck) 1/3 cup water 2/3 cup brown sugar 1 TBS yeast 5 cups white flour 3 TBS oil 2 tsp salt Pour the boiling water over the oatmeal and let sit until it's not scalding hot anymore (so you don't kill your yeast). Add brown sugar, the additional 1/3 cup water, yeast, flour, oil and salt. Mix until a smooth elastic dough forms and place in an oiled bowl, cover with saran wrap and let double in size. Punch down and roll out dough on a lightly floured surface until about an inch thick. Cut into rounds with a biscuit cutter and place rolls on a greased coolie sheet (it should make 24-30 rolls). Let rolls rise once again and bake for 12-15 minutes at 425 degrees.

Dilly Beans

This is my mom's famous recipe for canned "dilly beans". She uses fresh dill grown in her backyard. You'll like them if you like pickles. There is never a Dunaway function without them. Wash fresh green beans and snip off the ends.  Put 1 clove garlic and  1 head dill (when it reaches the seed stage) in a pint-sized jar, then pack the jar tight with as many beans that will fit. Brine: 2 c. vinegar 2 c. water 1/4 c. salt - no iodine! 1/4 t. cayenne pepper Heat brine & warm lids. Cold pack in water bath & boil for 10 minutes. If you're like me and have never canned before, that may have sounded like Chinese, but I'm posting it for my canning guru friend. I think someday I'll get there. I would guess there would be a time to wait to make sure the pickling process was complete, but I don't know how long that would be.

Ham and Swiss Casserole

Just in case you still have some of that Easter Ham still in the fridge... This was a classic dish in the Dunaway home growing up. It seemed like we usually had it when someone needed help and my mom was taking a meal in. Comfort food. 1 pkg. (8 oz.) medium egg noodles, cooked and drained 2 cups cubed fully cooked ham 2 cups shredded Swiss cheese 1 can condensed, creamed soup (Cream of Mushroom, Cream of Celery) 1 cup sour cream 1/2 cup chopped green pepper 1/2 cup chopped onion Melt a little butter in a frying pan and cook onions and green peppers until soft. Add sour cream and condensed soup. In a greased 13x9x2 inch baking dish or casserole dish, layer ingredients like you would a lasagna: noodles, meat, sauce, cheese . Two layers works well in a 9X13, but maybe 3 in a deeper casserole dish. Bake uncovered at 350 degrees for 40-45 minutes, or until heated through. Makes 6-8 servings.

Hulk Juice

1 banana (can use frozen to make it icy) 1 heaping Tbs. peanut butter spinach (I fill the blender to the top) protein powder milk (can use soy, almond, rice, or my favorite, COW!) My old workout friends in Mesa swore by this stuff, but they didn't have the PB in it. I think I saw the PB on a Pinterest recipe, and VIOLA! It makes it.

Emerald Spinach Salad

Baby Spinach Leaves Crumbled Bacon Candied Pecans Orange Slices (cut off rind, then cut in bite-sized pieces) Red Grapes, sliced in 1/2 Strawberries, sliced Red Onion Gorgonzala Cheese Ken's Steakhouse Lite Balsamic Vinaigrette Dressing I have been eating this like it's going out of style, and it makes me feel so good. I love the sweet/savory blend, and the protein too. One thing that is nice is that you don't have to toss the dressing on to make it taste good. *My friend copied this from Wildflower Bread Company. I've never had theirs, but why, when I love my own so much!

Tomatillo Salsa

1 can tomatillos - drained 1 bunch of cilantro - cut off most of the stems and you are ready to go jalapeno to taste juice of one lime a little less than half an onion 1 little less than 1/3 cup sugar salt to taste Throw it all in the blender and then enjoy. I added the lime and salt from another recipe. This is great on seafood tacos.

Ghoulosh

I know, I'm breaking my own rule about no cream soups, but it doesn't seem so bad next to the high fructose corn syrup feast that happens right after. I love this meal because it is yummy, hearty and one dish. I served it with some fresh bread. Yum! 1 1/2 pounds ground beef 1 pound ground pork sausage salt and pepper to taste 2 tablespoons pumpkin pie spice (I didn't use this in mine because I didn't have any, and I was afraid it might be too weird for my kids. Monster Munch

This was all over Pinterest, so I decided to try it. It is kind-of a combination of my favorite Fall Candy Mix and White Chocolate Party Mix . **Warning: You won't be able to stop eating once you've started!** 1 package Almond Bark (1 lb)* 2 bags of microwave popcorn, popped (approximately 16-20 C popped popcorn)** 1 C candy corn 1 1/2 C dry roasted, salted peanuts 1 C Reeces Pieces Pop popcorn and place in a large bowl. The largest you have. Pour peanuts, candy corn, and reeces pieces on top. Break up almond bark. Melt according to package directions. Pour over popcorn mixture. Stir until everything is well coated and then spread out onto waxed paper, parchment, or foil. Let sit until completely dry and then break up into clumps. *Almond Bark is "Candy Coating" found in the baking isle. **I popped 2/3 c. popcorn in our Crazy Pop, and it turned out great. Didn't measure to see if it made 16-20 cups.

Quick Mango Salsa

2 ripe mangos 1 large or 2 small tomatoes 2 green onions 1 jalepeño pepper, seeded and minced 1T chopped cilantro juice of 1 lime s&p to taste Just chop up ingredients and combine. I like to let it sit in the fridge for an hour or two for the flavors to combine. I am a cilantro nut, but you really don't want more cilantro than that. It will be too overpowering. It is SOOO yummy.

Sprinkles Cupcakes

Have you ever been to Sprinkles? It's a little gourmet cupcake shop with extremely delicious and slightly overpriced cupcakes. I highly recommend a visit the next time you are in downtown Scottsdale. Here are two recipes I tracked down online. I've tried them both. They are both fabulous. Laotian Spring Rolls

My sister-in-law Lithsa is the real deal. She was born in Laos, and migrated to the United States after living in a refugee camp in Thailand when she was about 12. I'm not sure if he would admit this, but I'm pretty sure it was her mad cooking skillz that sealed my brother's fate with her. I've tried many a spring roll in restaurants only to be severely disappointed after having hers. I finally was able to watch her closely and take notes to try to duplicate. She does it by taste, so the proportions can be altered to your liking. Ingredients : 2 c. water 1 bullion cube 5 heaping T brown sugar 8 heaping T peanut butter dash of fish sauce (optional - she likes "Lil Huong") juice of 2 limes cucumber carrot cilantro fresh mint leaves (Try using other veggies that you like.) rice paper (about 12" in diameter) large bowl of hottest tap water Dipping Sauce : Bring water and bullion cube to boiling. Alan's Potato Salad from Williams Sonoma

I'm not much of a potato fan (pun intended) in general, and I usually pass on potato salad, but I dream about this one. 5 peeled hard-boiled eggs 2.5 lbs small waxy potatoes such as Yukon Gold, Yellow Finn, or Red Rose Salt and freshly ground pepper 1/2 cup mayo 1/2 cup sour cream 1 TB sweet pickle juice (Just use whatever pickles you have on hand.) 1-2 TB Dijon mustard 3/4 cup minced red onion 1/2 cup chopped fresh dill (T his is what makes it. Just splurge and get it.) 1/4 cup minced sweet pickle 1/2 cup chopped celery 1 tsp paprika Cut the hard-boiled eggs into thin slices. Set aside. In a large saucepan, combine the potatoes, 2 tsp salt, and water to cover by 2 inches. Bring to a boil over medium-high heat, reduce the heat to medium, and cook, uncovered, until the potatoes are tender and can be easily pierced with a fork, 20-25 minutes. Easy Pizza Sauce

1 can tomato sauce (15 oz) 1 can tomato paste (6 oz) 1-2 cloves of garlic, crushed 1 T. Italian seasoning (or 1 1/2 t. each oregano and basil or whatever you feel like!) 1 t. paprika 1/2 t. onion powder 1/2 t. sugar Just combine ingredients and spread on crust. Almost Whole Wheat Bread

Tammy made this after I had Finn and I thought I'd died and gone to heaven. I called her or texted or something the next day and basically demanded that she give the recipe to me. It got water stained and eventually misplaced, so I begged her for another copy. Both of our printers were down so I scanned it. I used to be very intimidated by yeast, but I am gradually overcoming it. Maybe I already have? Anyway, here you go: I just mix the yeast and the sugar with a spoon and I let it rise in the bowl. Don't tell anyone. Maybe I should try it as written and see if it makes a difference. You probably have to click on the photo to see it better.

Aunt Jeri's Magic Laundry Stain Remover

1 cup powdered dishwashing detergent (like Cascade) 1 quart bleach 1 gallon water (1 to 4 to 16) Put it all in a plastic bucket and let the powder dissolve. Soak stained items for about 20 minutes, then wash like you regularly would, but not with other things. This is kind of a last resort for stained clothes - especially whites. I used it on my baby clothes that I have stored in the attic, and I was surprised at what it got out. You can use it on colors, but it might change the color. If you don't care if it turns a blue outfit to khaki, then go for it. Only use it if you don't care if it gets ruined.

hearty beef stew in a crock pot

Men like soup that is more MEAT than soup - this one is yummy and meaty 2 lbs beef chunks 2 TB vegetable oil 4 c. water 1 medium onion, diced 1 clove garlic, minced 1 TB salt 1 TB lemon juice 1 tsp. Sugar 1 tsp. Worcestershire sauce ½ tsp. Pepper ½ tsp. Paprika 2 bay leaves dash of allspice 6 carrots, peeled and chopped 3 potatoes, diced Brown meat (opt.) then put in crockpot. Add remaining ingredients. Cook on HIGH 4-6 hours or LOW 10-12 hours. Mix ¼ c. flour and ½ c. water and stir into stew before serving.

Coconut Almond Chex Mix

1 box Corn Chex cereal (I used all Rice Chex, and it was fine.) 1 box Crispix cereal 7 oz. coconut (I used unsweetened, but I don't think it matters) 1 c. slivered almonds 2 c. Karo syrup 2 c. sugar 2 c. butter 1/8 t. salt 2 t. vanilla Mix together cereal, coconut and almonds. Mix Karo syrup, sugar and butter together and boil 2 minutes. Add salt and vanilla. Pour over cereal mixture and stir until evenly coated. Spread onto a cookie sheet or wax paper to cool. Someone used to bring this to us at Christmas time, and we would devour it. Lo and behold, I found it in my extensive ward cookbook collection. It is as easy as rice crispy squares.

Uncle Tom's Hot Chocolate

3 or 4 parts milk to 1 part half & half then use whatever hot cocoa mix you want, but just add 1/3 more than the recipe calls for This is what I imagine the hot cocoa tasted like on "The Polar Express" "as thick and rich as melted chocolate bars." I only recommend drinking this about once a year. I've already had it twice this week. I better stop.
