Hawaiian Haystacks

Make 2 cups rice Boil 3-4 chicken breasts, cut into bite-size pieces Sauce: ½ c butter ¾ c flour 2 ½ c milk 1 can cream of mushroom or chicken soup ½ c. chicken broth (I usually just use the water I cook the chicken in) 1 ½ t salt Melt butter, stir in flour, add milk, soup, broth and salt. Thicken, then add chicken. Pour over rice and add toppings. We like chopped tomatoes, pineapple tidbits, c how mein noodles, olives, raisins, cheese, chopped celery, water chestnuts . *This is such a great 3-month supply recipe. I made it tonight with a can of Costco's chicken and just dumped the whole thing in. I love it, because it is an entire meal that my whole family can eat. My kids love choosing their toppings.

Pudding Pops

Here is a fun recipe for pudding pops that my kids had a fun time making this summer. Enjoy!

Play Dough

1 cup flour 1/4 cup salt 2 teaspoons cream of tartar 1 cup warm water 1 teaspoon oil food coloring Combine in saucepan and cook on medium heat, stirring constantly until mixture makes a ball. Remove from heat and let cool on counter. Knead, make a roll then slice into pieces.

Karla's Crepes

4 eggs 1 c. flour pinch of salt 1 c. water 1 c. milk Beat eggs, then add flour. Mix until it makes a paste-like substance. SLOWLY add water while stirring, then milk. If you want them sweeter add 2 T. sugar. Cook like a pancake in a greased pan. Spread your favorite jam or topping, roll up and enjoy! p.s. Happy Bastille Day!

Ham and Cheese Breakfast Casserole

24 oz. pkg. frozen hashbrowns ½ c. butter 1 ½ c. swiss cheese 1 ½ c. cheddar cheese 1 c. diced ham 2 c. half and half ½ t. seasoning salt 1 T. green onions 6 eggs Take thawed hashbrowns and press firmly into greased 9x13 glass baking dish. Melt butter and pour evenly over hashbrowns. Bake at 350 degrees for 20 min. Put cheese, ham and onions over hashbrowns. Beat eggs, half and half, and seasoning salt together. Pour over hashbrown mixture. Bake at 350 degrees for 35-40 minutes, uncovered. This is a favorite. Almost everytime I make it for someone I get a call for the recipe.

Breakfast Casserole

2 ½ c. herb croutons 2 c. shredded cheddar cheese 6 eggs 2 ½ c. milk ¾ t. dry mustard 2 lbs. ham or sausage 1 can cream of mushroom soup ½ c. milk Put croutons in greased 9x13 pan. Cover with cheese. Mix eggs, milk and mustard. Pour into pan. Fry sausage and put on top (or put ham on top). Cover with foil and refrigerate overnight. Mix soup with ½ c. milk – spread on top. Bake in 300 degree oven for 1 ½ hours. Delicious! Note: I have made it without letting it sit overnight and it still turns out great. Because we have 1:00 pm church we are going to serve this for brunch before our baby's blessing next Sunday.

Tuscan Mac n' Cheese

8 oz. sausage 8 oz. cream cheese, allow to soften slightly out of fridge 1 c. shredded mozzarella 2 c. dry macaroni 1 c.kalamata olives, diced 1 tbsp. butter 1 tbsp. flour 1 tsp. sage 1/4 tsp. thyme 1/2 tsp. salt 1/8 tsp. cayenne pepper 1 1/2 c. milk about 4-5 roma tomatoes, sliced Parmesan cheese Cook pasta and brown sausage. Cube cream cheese. Combine cheeses, olives and warm pasta and meat in a large bowl. (The cheeses will start to melt with the heat of the pasta and meat.) In a saucepan, melt butter. Mix all the spices and flour together in a small dish and then add to the butter. Add milk. Stir until frothy and slightly thicker. Pour over meat/cheese/macaroni mix. Put in a baking dish that has a lid and bake covered at 350 for 35 min. Remove cover, put tomato slices on top and sprinkle on parmesan cheese. Bake 15 minutes more. This is SO yummy! You're better off not knowing the nutritional information!

Oatmeal Rolls

2 cups water 1 cup quick oats 1/3 cup cold water 2/3 cup brown sugar 3 Tbls. Butter 1 ½ tsp. Salt 2 Tbls. Yeast 4 cups flour (bread flour is better) Bring 2 cups water to a boil, add oats and cook for 1 minute. Put cold water, brown sugar, butter and salt in a mixer. Add cooked oatmeal, and let sit until butter melts. (You can stir a little to help the butter melt). Add yeast and then flour, one cup at a time. Knead in mixer for 4 minutes. The dough is sticky. Let rise in mixer until dough doubles in size (about 1 hour). Punch down by turning mixer on for a few seconds. Drop the dough, or roll into balls with hands, onto a greased cookie sheet. Let rise 30 minutes. Bake @ 350 for 20-25 minutes Makes 2 dozen rolls that fit on one big cookie sheet. (I made these with regular oats so I cooked the oatmeal a little longer. They still turned out great.)
