2 cups water
1 cup quick oats
1/3 cup cold water
2/3 cup brown sugar
3 Tbls. Butter
1 ½ tsp. Salt
2 Tbls. Yeast
4 cups flour (bread flour is better)
Bring 2 cups water to a boil, add oats and cook for 1 minute.
Put cold water, brown sugar, butter and salt in a mixer. Add cooked oatmeal, and let sit until butter melts. (You can stir a little to help the butter melt). Add yeast and then flour, one cup at a time. Knead in mixer for 4 minutes. The dough is sticky. Let rise in mixer until dough doubles in size (about 1 hour). Punch down by turning mixer on for a few seconds. Drop the dough, or roll into balls with hands, onto a greased cookie sheet. Let rise 30 minutes.
Bake @ 350 for 20-25 minutes
Makes 2 dozen rolls that fit on one big cookie sheet.
(I made these with regular oats so I cooked the oatmeal a little longer. They still turned out great.)
